From the winemakers Sarah & Iwo (Si), this Sauvignon Blanc is produced using 100% organic and biodynamic farming methods and is described as textual rather than 'skinsy'. A portion of the harvest undergoes skin fermentation for up to 30 days, while the rest consists of free-run juice that is barrel fermented. After malolactic fermentation, the wine is blended and aged for six months in mature French oak.
