Yapincak is a native variety in the Thrace region. Grown in a single 30-year-old vineyard, the grapes are pressed and fermented in stainless steel tanks. The wine is bottled whilst fermentation is still taking place with no fining and filtration. This leaves CO2 trapped as bubbles, making it naturally sparkling. Pale gold colour, with aromas of cream, honey and ripe pear with a spicy character. Bright and elegant on the palate with palate acidity.
